Early Harvest Cold-Pressed Olive Oil
It is made from still green olives which are picked conscientiously during the early harvest period in the beginning of October, and has a low proportion of acid and oxidation. The olives are gathered in perforated, well-ventilated containers and transported within the same day to the extraction process. By carrying in well-ventilated containers, we avoid oxidation and fermentation of the fruit, hence occurrence of any defective taste in the oil.
In this way we obtain less but better quality olive oil compared to ripe harvest olives.
It has a fruity taste, pungent aroma and fresh odour. The oil lasts longer on the condition that it is kept away from the light, as it has plenty of chlorophyll. Its antioxidant level is at the highest rate.
Our olive oil is produced with cold-press method under 27ºC of temperature, using the less amount of water, in 2-phased systems. Thanks to this method of production, we keep the vitamins and phenolic components, which are good for health, at the highest level.
After the pre-analysis of all our produced olive oil is made in our factory, it is taken into chrome-steeled tanks for the storage.
