OLD-FASHIONED GOTLAND APPLE CAKE WITH VANILLA CUSTARD

Apple Cake
Preheat the oven to 175 C (350 F). Combine all ingredients and pour into a
greased 22cm (9 inch) pan. Bake for about 45 minutes. Cool on a rack for 15
minutes. Remove the pan. Serve with vanilla custard.

Vanilla custard
Bring the cream with the vanilla pod to a boil. Whisk the egg yolks and
sugar. Whisk it in the cream. Heat in the saucepan to 83C (180F) whisk-
ing constantly. Chill, remove the vanilla pod and strain.

APPLE CAKE
5dl (2 cups) apple compote
2 ½ dl (1 cup) bread crumbs
1 egg
150g (5 oz) melted butter
2 tbsp light syrup
½ dl ( ¼ cup) almond flour or ground almonds
1 tsp cinnamon

VANILLA CUSTARD
2 dl (1 cup) light cream
1 vanilla pod, split lengthwise
3 egg yolks
40 g (3 ½ tbsp) sugar
