Sieve the flour into a large baking bowl, add the salt. Make a well in the centre of the flour and add the eggs and beat well until smooth and lump free. Add half the cold milk, beat well. Add the remaining milk and stir. Lightly grease a pancake pan or frying pan (24-26 cm in diameter), heat until very hot and cook the crepes until set and lightly golden.
Mix dry cottage cheese, eggs, washed and steamed raisins well, adding sugar to taste.
Making the Crepes
Spread the fried side of the crepe with cottage cheese filling. Roll up into patties and brown on both sides in lightly oiled pan. Place the crepes in the oven for about 5-6 minutes.
Serve hot with honey.
