Sultan's Delight (lamb stew served on mashed eggplant)
Saute the lamb meat with butter and continue sauteing after adding onion,garlic and red capia.Then add the peeled tomatoes and wait till ingredients boil. Add the tomato paste and spices into the mixture and cook them all together twenty minutes more. Lamb stew is ready for the service.
For the sauce, Grill the eggplants on the ember ,peel their skins. Cook the flour with the butter. and add the milk and grilled eggplants into the flour mixture, Cook for five minutes more.
Put this sauce to the plate first and serve with lamp on it.
