FRIED AUBERGINES AND PEPPERS IN TOMATO SAUCE (ŞAKŞUKA)
Peel aubergines and dice them. Steep diced aubergines in salty water. By the way, chop peppers as the same size of aubergines. Drain away the salty water and fry aubergines and peppers.
Dice tomatoes and mash garlic cloves then saute them together quickly. Add fried aubergines and peppers on sauted tomatoes. Add salt, grape vinegar, flaked rep pepper and sugar and cook them all together for a while. Serve it cool.

Olive Oil ( For Frying)
Sugar ( 10 gr) ( ora teaspoon)

3 cloves of garlic
flaked red pepper
30 ml grape vinegar
