LABA DOLMA ( STUFFED RACK OF GOAT)
Finely chop the liver and place in a heated pan. Add minced meat and butter and sauté for a while. Add the finely chopped onions and add the shredded tomatoes when onions turned into pink.
Add tomato paste, red pepper, rice and sauté too.
When the sauting process is finished, add black pepper, finely chopped parsley, salt and unshelled roasted almonds. The mixture to be used for stuffing is ready.
Make a space between the ribs and meat and fill the mixture and add half a glass of water. Suture the opening in the rib with a suitable thread.
Spread tomato paste over the stuffed meat and fry both sides with butter. Add water until covering whole around of ribs and cook. When the cooking is completed, remove the ropes and ribs.

2 onions
3 tomatoes
